Meet the chefs
How did you arrive at running this business? What path brought you here? Over 20 years of experience in the development of products from inception to commercialization led me to want a change. The one piece of the pie I was always lacking was marketing insight. Thus, we created Creative Food Solutions, a collaborative company that merges product design with food marketing.
What are you known for professionally? What do you have a knack for? I have a real knack for designing products that have stumped others. The harder the challenge, the more I like it!
What’s the one problem you are best at solving for your clients? I have a real strength when it comes to protein formulation, especially beef and poultry.
What are you most passionate about professionally? I find it a true honor to design foods that feed tens of thousands of people daily. It’s what I love best about my job!
What are you passionate about personally? What do you really enjoy? What can’t you stop talking about? I’m an old-school family man that loves his wife and his daughters. Also, I am an official car nut. I’m always in the midst of a project build of some sort, getting my hands dirty and loving every minute of it.
What would be impossible for you to give up? Italian food!
Why would someone not want to work with you? I sing while I work!
Anything else you’d like to tell people about yourself? I am so lucky to truly love what I do for work and to have so much love at home.
What path brought you here? After 22 years behind the line in mostly fine dining establishments, I sought a different kind of challenge. I can now take everything I’ve learned and tweak it for each one of our clients.
What are you known for professionally? What do you have a knack for? My knack is turning the ordinary into the extraordinary. I thank my extensive behind-the-line experience for knowing how to create menu items that fit perfectly into your business.
What’s the one problem you are best at solving for your clients? How to make it work. Knowing your clientele and being able to bring new items to the table without interrupting your current flow.
What are you most passionate about professionally? People and food! Working with both, day in and day out, is the greatest opportunity!
What are you passionate about personally? What do you really enjoy? What can’t you stop talking about? Enjoying experiences, any and all. With a group of people or just the two of us. Life is about seeking out something new—for me, it’s food. There are endless opportunities to enjoy new food experiences.
What would be impossible for you to give up? Cooking/entertaining.
Why would someone not want to work with you? Although I have no problem doing dishes I have a knack for using every single pot, pan, spoon and towel around!
Anything else you’d like to tell people about yourself? When I’m not in the kitchen, you can find me saltwater fishing, because you need to catch what you eat!
What path brought you here? For as long as I can remember I have had an interest in cooking. After trying my hand in menu development, I found that my passion is in the details that define great tasting food.
What are you known for professionally? What do you have a knack for? I’m known for being a task-oriented person that works well in groups and individually.
What’s the one problem you are best at solving for your clients? Staying focused and on top of project specifics and to ensure we all meet client satisfaction.
What are you most passionate about professionally? Working with food and helping to create one of a kind dishes is truly an amazing feeling!
What are you passionate about personally? What do you really enjoy? What can’t you stop talking about? I am very passionate about cooking and baking. I love to host dinner parties and around the holidays, my friends and I get together to bake an enormous amount of cookies and desserts.
What would be impossible for you to give up? My iPhone and pizza!
Why would someone not want to work with you? Someone might not want to work with me because I cannot sit still!
Anything else you’d like to tell people about yourself? These past few years I have discovered a real fondness for traveling. When not traveling, I enjoy spending time with family and friends while relaxing at home with a glass of red wine.
What path brought you here? I have spent over 40 years working in food product development, commercialization, manufacturing, restaurant application and product quality monitoring. I worked with protein manufacturers as well as with a major quick service chain as a director of product innovation.
What are you known for professionally? I have a real knack for troubleshooting-working with equipment, ingredient and process-to fix quality problems as well as create new food products.
What’s the one problem you are best at solving for your clients? I’ve spent a great deal of time working on creating premium quality textures in processed food products, especially ground beef.
What are you most passionate about professionally? Networking with my peers, learning about some new opportunity every day.
What are you passionate about personally? What do you really enjoy? What can’t you stop talking about? Without question, I am extremely proud of my wife, children and grandchildren. They are my life. I especially enjoy the opportunity to share time with them while working on our house in the Catskills.
What would be impossible for you to give up? Chocolate!
Why would someone not want to work with you? I don’t watch the clock but work until it gets done.
Anything else you’d like to tell people about yourself? I strongly believe in the participation in and support of the Research Chefs Association of which I have been a Board Member. The combination of Culinary and Food Science is an extremely effective resource.
